Peasant Table loaves are naturally leavened with sourdough and fermented over 24 hours. This slow fermentation process breaks down gluten and makes bread more easily digestible, more delicious, and more nutritious. (So much so that we’ve convinced ourselves it’s the most important food group.)

Our basic peasant loaf only uses only 3 ingredients—flour, water, and salt. (Of course, our flavored loaves have some other goodies added in!)

But be warned: we bake in a home kitchen that also processes dairy and nuts (in addition to loads of gluten).

Before 2020, founder and head baker Tom Cleveland could barely cook scrambled eggs, let alone bake beautiful loaves of homemade sourdough. But as with everything else, the pandemic turned things upside down, and Tom was not immune from the sourdough craze that swept the nation. Partially because he needed a hobby during dark times. But also partially because his wife Jenny’s favorite food is fresh bread, and at her intake level paired with the cost of good bread these days, they’d need to take out a second mortgage. So when the couple moved to Santa Barbara during the summer of 2020, Tom finally learned how to turn on an oven, and signed the couple up for a local intro to bread-making class atPascale’s Kitchen Pascale's Kitchen (highly recommend!) so they could start making it themselves.

Fueled by the unparalleled taste of fresh carbs (and how much more Jenny seemed to love him with this newfound gluten mastery . . .) Tom devoted every waking pandemic hour to reading bread blogs, watching YouTube videos on natural fermentation, and becoming Chad Robertson’s biggest fanboy.

After thousands of loaves and expanding waistlines, Tom’s love for baking has only grown, and we’re ready to break bread with the larger community. We named our home bakery ‘Peasant Table’ after our favorite way to eat—you guessed it, like peasants. (But, like, bougie peasants?) Against doctor’s orders, probably 90% of our calories are carbs, and that’s because nothing beats a hunk of fresh sourdough dipped into a steaming bowl of stew, just like they did it in ye’ olden days.
